Our favorite Maine Blueberry "Berry good" Cake...

1st...The Blueberries....

1 14/15 oz can Wyman's Blueberries...either with water or

light syrup...we use with WATER....let is drain while you make the batter..

..preheat oven to 350 degrees...8x8 glass pan greased...

2nd shelf from bottom..

need: 1 bowl/pitcher...large

 one glass measuring cup and a bowl to mix dry ingred.

large spoon...rubber spatulas...measuring spoons

In a large bowl/pitcher combine with mixer:

1/2 stick of reallll butter soft...

3/4 c of granulated sugar...

cream well...then add:

1 large/jumbo egg...

In a glass measuring cup combine:

1/2 c whole milk...or use 2% but not skim..

1/2 tsp of reallll vanilla...

Add that to cream mixture....mix well with mixer...

In another bowl combine:

1 1/4 c all purpose flour...

1 1/2 tsp baking powder...

dash nutmeg...

smidge of salt.......

Add that to cream mixture.....mix well with mixer....

spoon 3/4 of the batter into baking pan...spread with spatula to cover bottom.....

....by spoonfuls drop blueberries over the batter...staying within the edges of the batter about 1/2 inch...

...spoon rest of batter over the blueberries...spread trying not to "roll out the BB's underneath" to keep the batter white...

sprinkle top lightly with sugar and cinnamon...

(use more of both if you like Cinnamon)

bake for 45 minutes.....wait?!?...then ENJOY after 20 minutes on cooling rack...warm is the best...good!

...serves 9.....2" + pieces..

Note:  1 c+ Fresh or frozen blueberries may be used... coat lightly with flour and sugar before adding to recipe...

...Double recipe for 12 jumbo muffins...30 + minutes..

or 13 x 9 pan....test at 55 minutes...could be 75 min..

prefer the 8x8 pan...muffins too but it's alot of work!!!

Blueberry Boost
In a study, scientists noted that the blueberry health benefits persisted even when the test subjects were fed a high-fat diet. At the end of the 3-week study period, the blueberry-supplemented diet had reduced LDL (the bad stuff) cholesterol by as much as 44 percent. And total cholesterol had dipped 27 percent. Pretty impressive numbers. More study is needed to see whether the same benefits would hold true in humans, but researchers are optimistic.

How Sweet It Is
Researchers think that blueberries may help keep blood fats down because of their liver-supportive nature. The liver is the organ that helps the body get rid of excessive levels of cholesterol. And compounds in blueberries appear to help activate certain genes in the liver, giving it a boost in doing its job more efficiently. That's just one more reason -- in addition to their blood-pressure-lowering and fat-cell-thwarting powers -- to always have fresh, frozen, and freeze-dried blueberries on hand.
